Why do this?
Aside from the aesthetics, unlocking the Edit Player menu allows you to access the Tactics Tab. If you save a player's tactics with "Legacy Defending" checked, and then load that squad file into a Career Mode, you can actually play with the old-school defending system—a feature EA removed from Career Mode in FIFA 15 but left the code for in the game.
